I’m a fan of Pfriem’s wild and sour ales and added their first release of Brett Brux Pale Ale into The Brux Project to watch it develop over time. When they released their Brett Trois Pale a year later, I decided to do a mini-cellaring project and get enough to open 1 a year for 3 years.
Brettanomyces Bruxellensis “Trois” is a strain that Pfriem has isolated to use as their house strain because its unique mix of flavor profile and production characteristics make it an ideal match for what Pfriem wants to do with its beers.
